PRODUCTION TECHNIQUES
To make turnip greens pesto, freshly harvested turnip greens are used. After washing and removing the tough stems and yellowed leaves, they are cooked in previously boiled water until tender. They are then drained, squeezed, and left to cool. Once cooled, almonds, chili peppers, oil, garlic, and lemon juice are blended together to form a cream. The resulting product is then placed in jars, hermetically sealed, and placed in pasteurization baskets where they are immersed for 15 minutes in water heated to 102°C, until the core temperature reaches 87°C.
COMBINATIONS
Turnip greens pesto is excellent for seasoning orecchiette, pasta, baked recipes, pizzas, panzerotti, etc.
HANDLING AND STORAGE
Keep away from light and heat. Store the product in a hygienic environment at a temperature no higher than 33°C. Do not store beyond the expiration date indicated on the package.
The packaging is fragile because the material used is glass, which cannot withstand impacts or excessive static loads. Avoid stacking more than 10 boxes, bumping, or overturning the packaging. If a box is overturned, check the condition of the packaging inside (there should be no cracks, chips, dents, or dents in the lid, etc.). If the packaging is damaged, send it for disposal.
Once opened, store in the refrigerator at a temperature of +4°C.

The product is packaged in clear glass jars intended for food use. The lids are made of steel with a food-grade rubber membrane that ensures the container is airtight and prevents direct contact between the product and the metal. The packaging material is reusable and plastic-free. The packaging is recyclable.
