We adhere to traditional olive harvesting methods, patiently monitoring the ripening process on the branches of our silvery olive trees. Prolonged ripening could alter the color, texture, aroma, and organoleptic qualities of the olives. For this reason, we wait until the olives reach a light pink hue. To preserve all the characteristics of our olives, we strictly adhere to the milling times, which take place within a few hours of harvest. This allows us to obtain an oil of the utmost purity, a beautiful straw-yellow color, with a heady aroma and a flavor that preserves the characteristics of the olives used. The olives are pressed in our own mill to ensure the highest quality of the extra virgin olive oil produced on site.

Harvesting Technique
The olives come from an internal olive grove, both from centuries-old trees and from traditional intensive systems. Harvesting is done mechanically, using a tilting umbrella for the smaller trees and a beater for the centuries-old ones. Oil extraction occurs through a two-phase continuous cycle, followed by natural decantation and racking.
