Native Cultivars

The Coratina cultivar, originating from the Corato area (Bari), is the undisputed star of Olio Madò. With its intense aromatic profile, rich in polyphenols and with pronounced bitterness and spiciness, it is synonymous with health and quality.

Cold Pressing

Our oil is extracted within a few hours of harvesting, at temperatures below 27°C, preserving all the volatile aromas and antioxidant properties naturally present in the olives.

The result is a bright green oil, with aromas of artichoke, fresh grass, and almond — a sensory explosion that tells the story of the land it comes from.
